Here's a traditional beef haleem recipe for you:
Ingredients:
- 1 cup whole wheat grains (cracked wheat)
- 1 cup boneless beef, cut into small pieces
- 1/2 cup yellow lentils (moong dal)
- 1/2 cup split chickpeas (chana dal)
- 1/4 cup masoor dal (red lentils)
- 1/4 cup urad dal (black lentils)
- 1/4 cup barley
- 1 large onion, finely chopped
- 2 tablespoons ginger-garlic paste
- 2 tablespoons ghee or vegetable oil
- 1 teaspoon turmeric powder
- 1 teaspoon red chili powder
- 1 teaspoon garam masala powder
- 1/2 teaspoon cumin powder
- Salt to taste
- Fresh coriander leaves, chopped, for garnish
- Fried onions, for garnish
- Ginger julienne, for garnish
- Lemon wedges, for serving
For the spice mix (to be ground together):
- 4 green cardamom pods
- 4 cloves
- 1-inch cinnamon stick
- 1 teaspoon cumin seeds
Instructions:
- Wash the wheat grains thoroughly and soak them in water for about 2 hours. Drain and set aside.
- In a large pot, add the soaked wheat grains, boneless beef, yellow lentils, split chickpeas, masoor dal, urad dal, barley, and enough water to cover them. Cook on medium heat until the meat is tender and the grains are soft and mushy. This usually takes around 3-4 hours. You can also use a pressure cooker to expedite the process.
- Once cooked, use a hand blender or a wooden spoon to mash the mixture until it reaches a thick, porridge-like consistency. Set aside.
- In a separate pan, heat ghee or oil over medium heat. Add the chopped onions and sauté until golden brown.
- Add ginger-garlic paste and cook for another 2 minutes until fragrant.
- Add the spice mix (ground cardamom, cloves, cinnamon, and cumin seeds) and sauté for a minute.
- Add turmeric powder, red chili powder, garam masala powder, cumin powder, and salt. Mix well.
- Transfer the cooked meat and grain mixture (haleem) to the pan and mix everything together. Cook on low heat for another 15-20 minutes to allow the flavors to blend.
- Adjust the consistency by adding water if needed. Haleem should be thick but still pourable.
- Serve hot in bowls, garnished with fresh coriander leaves, fried onions, ginger julienne, and a squeeze of lemon juice on top.
